I hope you all had a wonderful weekend. Mine was not the best, but I am ready to put it behind me and start fresh. The weather was stunning and Winston had a blast walking and playing outside. I also got to spend a lot of time with family, which I loved! I have some tasty fall treats for you all, I’ve been inspired by the cool weather to make a big ol’ pot of CHILI!
1 lb. ground beef or chicken
3 cans of beans (pinto, kidney, black, etc.)
1 can of diced tomatoes
1 green pepper, diced
1/4 cup of corn
1/4 cup of quinoa
1 packet of gluten free chili seasoning
1 cup of water
1 bag of organic corn tortilla chips
First, brown the meat in a skillet. While the meat is browning, rinse beans and add them to a large pot. Add all other ingredients (with the exception of tortilla chips) and about 1 cup of water. Turn heat on low. When meat is browned, pour out the fat then add it to the chili pot. Stir and continue to heat on low for about 2 hours. Pour chili in a bowl and sprinkle on crumbled tortilla chips… Enjoy! You also have the option to add some cheddar cheese.
Another great meal is one that I consider a “classic American meal.” Sometimes you just want a big bacon cheeseburger and fries without all the guilt! Enter lettuce wrap burgers and oven baked fries.
Grill up a burger and add bacon and/or cheese if you’d like! Wash large chunks of lettuce from a head of lettuce and use that as a “bun.” Dice tomato and avocado, add it to top of burger. For the fries, heat oven to 400 and wash a baking potato really well. Cut it into long strips- leave the skin on for added flavor and nutrients. (That is why you need to wash it really well.) Pour melted Irish butter, salt, pepper and Lawry’s seasoned salt over the potatoes and stir. Place potatoes on a baking sheet and bake for 12 minutes. Flip the fries and cook for another 12 minutes. On another note, does anyone else have a massive obsession with vests? (Other than my college roommates, we are currently group texting about how amazing vests are… #basic)
I bought a cream vest from http://www.oldnavy.com and loved it so much that I ordered it in forest green and a different puffer vest in dark blue. I cannot wait to wear them. In addition to vests, flannel is my jam. Here are some fall flannel outfits from the past week:
